Chocolate Chip Protein Cookies
Ingredients: (for about 20 cookies)
200 grams of oat flour
50 grams whey protein
60 grams xylitol (or sweetener of choice)
1 tsp baking soda
1 egg
50 grams of dark chocolate chips *
1/4 tsp salt
70 grams of coconut oil
Can't find oat flour? Not to worry, simply grind oats in a food processor and you've got yourself home-made oat flour.
Mix the dry ingredients in a bowl first, and pre-heat the oven to 180C (350F)
Take another bowl and the heat coconut oil in the microwave until it's liquid. Let it cool for a bit.
Whisk the egg, and add it into the dry ingredients with the coconut oil.
Mix the dough until it form a crumbly consistency. Roll the dough into small balls and flatten them a bit with the palms of your hands. Place them on a cookie sheet and bake for 8-10 minutes.
Let them cool on a wire rack.
