Bacon, Vegetable & Blue Cheese Soup

We went to stay with friends this week, and this amazing soup was on the menu on Monday! It uses any seasonal veg you have to hand, and comes in at a reasonable 195 calories a bowl! You can leave the cheese out to have even less calories, but I think the cheese gives it a lovely creaminess. Even my fussy 10 year old loves it.

The calorie values below are for using low fat margarine, broccoli & lardons.


Bacon, Vegetable & Blue Cheese Soup

Serves 8

2 medium onions or large leeks, finely chopped
4 medium potatoes, peeled (400g), diced
4 rashers of smoked bacon, fat trimmed off, chopped, or 125g smoked bacon lardons
2 courgettes, diced, or 200g broccoli, sprouts or cabbage
6 mushrooms, chopped
1 head wet garlic, or 3-4 cloves of garlic from bulb, finely chopped
30g low fat margarine, or 2tbsp olive oil
2 Knorr vegetable stock cubes, dissolved in a litre of boiling water
1/2 300ml tub low fat creme fraiche
50g soft blue cheese, cut into small pieces


1. Fry the onion, garlic and bacon in the margarine or oil, until the onion has softened
2. Add the potatoes and vegetables, and stir for 2 minutes
3. Add the stock, bring to the boil, and simmer for 20 minutes
4. Allow to cool slightly before adding the cheese, and blending the soup until smooth
5. Add the creme fraiche and stir well
6. Serve with crusty bread

    My friend used full fat versions of everything, so the one we had on Monday wasn't as virtuous as this version, but the difference in taste is negligible. She used Cambozola blue Brie, which gave an amazing creamy texture to it. I've used Gorgonzola, as it was all I could get my hands on this morning, and, while nice, the Cambozola is MUCH better, with a similar amount of calories.
