What to do with Leeks in the Summer?

I know leeks are great in soups, but they're in the onion family. So, what do you use them in?

    pan fryin butter and then add them to open faced sandwiches still warm then put a slice of low sodium american cheese over it so it starts to melt and oh my god it is heaven on a plate

    Sauteed with green and yellow squash, a favorite of mine!

    Sliced potatoes, leeks with salt-and-pepper and garlic wrapped in foil and cooked on grill.

    Fried potatoes and leeks...

    Fresh spinach, strawberry and leek salad...

    Off to the store to buy some leeks :)

    I knew someone who put them in foil with salad dressing and grilled them. They can be sandy though.

    Leeks are great in risotto (especially with salmon).

    Mix with low fat garlic Philly type cheese and use to fill jacket potatoes.

    Steam with peas and mint for a lovely side dish.

    i put them in quiches/tarts and risotto and pasta sauces
    or
    fry them in a little butter & add to mashed potatoes
    or
    salmon & leek filo parcels (great for dinner parties)

  • Thanks everyone, I think tonight I'm going to saute them in a little butter and put on our chicken burgers with BBQ sauce and make some mashed potatoes with leeks then maybe add some to our fresh baked green beans. I will be using whole grain buns.
    MMMmm, I'm excited for dinner now.
