Suggestions or recipe ideas?

Hello, I am looking for any suggestions or recipes that will allow to sneak in some more veggies. I am not a fan of many veggies, but I would love to eat more of them for both my own sake and my daughters. She loves them so her liking them isn't an issue, but now that she's getting older I want to incorporate them more.

    If you're not a fan of veggies you can always puree them and add them to soup! Try pureeing some cooked beans and tomatoes... it gives soup a really creamy texture and a lot of flavor. Also, if you blend them you can make a delicious dip that's great on sandwiches, and in wraps and pitas :)

    i run mine through a food processor sometimes and add to meatloaf and meatballs and stuff. you could add to spaghetti sauce, too

    zucchini, carrots, mushroom - whatever i have that needs to be used up

    I'm roasting veggies lately. They're pretty good with some olive oil and spices

    How about this veggie meal - sweet pepper halves stuffed with a filling of chopped red onion, courgette, tomatoes, kidney beans and soya mince with seasoning (cook these first in about a teaspoon of olive or rapeseed oil) and topped with a little grated cheese (smoked soya cheese tastes great) then baked, maybe served with a baked potato, carrots, peas and broccoli. That's seven veg plus the potato, and beans, soya and cheese for protein - could add toasted sunflower or pumpkin seeds to filling too for extra crunch and goodness, or fresh herbs like basil.

    Broccoli slaw mix goes great in wraps. Combine with chicken and Thai peanut sauce in flatbread for about 275 calories.

    I love shredding veggies and adding them to other foods. Carrots, onions, zucchini, and bell peppers go well in marinara.
