MY easy weekly breakfast burrito premake

My Monday morning breakfast burrito ritual: fry five pieces of bacon. Now when it comes to bacon to each their own but I refuse to buy bacon in a pouch; so I get the deli thick cut bacon! After cooked set aside to cool on paper towels. In bowl add 6 large eggs or 10 egg whites, 1/4 cup roughly of milk, 1 cup chopped finely kale, 1/2 cup shredded cheese, few sprigs chopped chives, season is to taste and half a small minced shallot, pan scramble. Then set aside to cool. I use whole wheat or regular flour 8 inch tortillas, bring one out, break one piece of bacon in half place in center of tortilla add pinch of pepper jack cheese on bacon, add two small spoonfuls of eggs. to fold it bring both left an right side in to touch, while holding that in place bring the side closest to you up (like a gift) then hold it and roll tight to bring the front last flap back and it should look like a mini burrito!! To store for the week I wrap in a paper towel (once cooled) then wrap in parchment paper or otherwise known as baking paper then I put them individually in a sandwich bag, they stay good in the fridge all week !! It takes 1-130minuets MAX to reheat... Then enjoy !!! Because I do

I like to freeze them and make a lot at one time. In fact, if I have too many leftovers, I'll just make them into burritos to eat over the next 2-3 months.
Breakfast burrito:
Sauté onion, pepper, mushroom, spinach. Chop 8 slices of turkey or center cut bacon, and crisp. Cook 8 scrambled eggs, and mix all cooled ingredients together. Lay out 8 large high fiber/low carb burritos (like La Tortilla Factory smart and delicious line or Ole Wellness High Fiber) – for gluten free, Aldi sells a 90 calorie GF tortilla. Divide mixture amongst 8 burritos, top each with 14-28g cheese of choice, and roll into burritos, folding in the sides. Lay seam side down on cookie sheet, and freeze. Once frozen, transfer to labeled freezer bag. To serve, microwave wrapped in damp paper towel for 2-3 minutes until thawed or microwave until thawed and crisp in a pan or under the broiler. Options: add in cooked potatoes, vegetables to taste, sun dried tomatoes, jalapenos, hot sauce, or any other preferred fillings. Can substitute 2 egg whites for each whole egg. Mine typically are in the 200-225 calorie range.
Non-breakfast burrito:
Mix 2 cups of cooked rice of choice, sautéed vegetables of choice, one can rinsed black beans, salsa (optional jalapeno, hot sauce, sofrito, corn, etc). Lay out 8 large high fiber/low carb burritos, divide, top each with 14-28g cheese, roll, and freeze on cookie sheet. Once frozen, transfer to a labeled freezer bag. To serve, microwave wrapped in paper towel for 2-3 minutes until thawed or microwave until thawed and crisp in a pan or under a broiler. Options: replace some or all of the rice and beans with shredded cooked chicken/beef/pork or cooked ground meat.

That sucks! I find that with at least 50:50 veggies to egg the texture is fine, but I have had that rubbery texture when there aren't enough vegetables.0 -
I like how I make them, and many else do so I shared, I dislike and wil not freeze anything as much as possible bc freezing losses texture and flavor. These mine I shared can keep 5-6 days straight0

McMforLife I think she was just trying to add tips and ideas for others, not convince you that you should do your burritos a different way. :-)
I actually love the idea of making a few and freezing them, I think I will try it! I'm kind of English muffin-ed out right now, but I get up before the rest of the house and can't clang pots and pans around in the morning.
