Plantain
Hi Guys,
In an attempt to introduce new fruits and vegetable into my diet, I bought a Plantain last week. The only thing is I have no idea how to cook it and all the recipes I can find on the web involve frying it.
Does anyone have any healthy Plantain recieps they can share?

I wish I could help you. The only way I know how to make them is to fry them as well. Maybe you could try slicing it flattening it and making like baked tostones out of it? That's the only thing that comes to mind.0

Thanks, I did try looking on here but the only two reciepes are Plantain Lasagne (which the recipe author admits is not a healthy option) and plantain chips when actually I was hoping to find something you can eat witha meal.

I cook Plantain a variety of ways.
1. Makes a great addition to soups & stews. I add in some yucca and some plantain instead of potatoes.
2. Either baked or fried tostones. Cut the Plantain in about 1 inch circles. Bake or Fry until soft and lightly brown. Squash (I use a tortilla press to smash mine but a piece of wax paper between 2 small plates or a glass will work too) then fry/bake a second time! I prefer the greener plantains for this.
3. Let them get REALLY ripe. Then leaving the peel on I slice it down the center longwise, add a little butter and brown sugar and bake. Excellent dessert, reminiscent of a baked sweet potato but much better.
4. Using a not all the way green but not overly ripe plantains cut in nice sized chunks and boil, drain and toss in a dash of evoo or butter and then sprinkle with chipolte powder for a nice side dish instead of potatoes.
5. Cut in small cubes and pan fry for a yummy addition to breakfast.

I'm Puerto Rican and plantains are a staple for us. Try this in the morning very filling boil a green plantain in it's skin peel when done mash with lil olive oil salt and lots of fresh crushed garlic. It's called mangu. Great for dinner to will keep you full all day lol.
Also take a ripe plantain cut off the ends and slice the skin down the middle leaving skin on wrap in a water soaked paper towel and microwave for three mins or until cooked thru depends on size n ur microwave. It's a great side dish to fish or with brown rice.0 -

We ate the one I bought for tea tonight and I used this recipe (was just coming on to let others know about it when i saw your replies :laugh: )

Finding Crayfish powder where I live is a bit like trying to find a needle in a haystack so I added a tub of crayfish tails instead. I didn't add any oil, used frozen haddock and a knorr vegetable stock cube and it worked out as about 247 calories per portion.0
