CALLING PLANET VEGAN: Egg substituion suggestions for baking?

I use 1 Tbsp ground chia seeds plus 2 Tbsp water per egg and let it sit for about 5 minutes to start to gel. I've heard flaxseed is a good substitute, but I've never tried it. I did try the ener-g egg replacer, but the end result was really dry and crumbly. If I used it again, I'd probably add some oil or applesauce to keep it moist.

For baked goods that pair well with banana, that's my choice.0

Tablespoon of ground flax seed with equal part water. Wait 10 minutes and it's ready!0

Vinegar. Vegan chef, Chloe Coscarelli, won "Cupcake Wars" using vinegar as an egg substitute and impressed the judges. I think it was 1 tbsp=1 egg, but look it up on the Internet to be sure. Good luck0

I like chia seeds best, and I usually toss in a mashed banana as well. I stay clear of flax in sweet things because it tends to have a bitter taste.0

1/4 cup unsweetened applesauce = 1 egg, just make sure to decrease the amount of water in recipe if any is called for or you may end up having to bake it for a few minutes longer0

Aquafaba. It's the water left over from cooking chickpeas. It whips like egg white. You can even make meringue from it. No joke.0

I love using applesauce as an egg replacement. It also works well as an oil replacement in some baking recipes.0

I have a friend who uses tofu (1/4 pureed = 1 egg). I've not tried that though. Banana (1/4 cup mashed = 1 egg), applesauce (1/3 cup = 1 egg), 1/4 cup mashed avocado, or flax seed (1 tbs plus 3 tbs hot water (let set for a few minutes..add 1/4 tsp baking powder for leavening) = 1 egg) are the only ones I've tried so far.

Applesauce or mashed bananas work perfectly with cakes and sweet breads.0

You can also use the applesauce as a sugar replacement. Approx 1/2 c sauce for 1 c sugar.
