If you could only have one cheese for eternity, what would it be?

I'm going with Cheddar. If I have to get specific Extra Sharp white cheddar.
My second choice is Cypress Grove Purple Haze.

Parmesan no question. Can add amazing flavor to almost anything. I could live without cheddar on nachos and mozza on lasagna...... but I put parm on almost everything :P
