What to eat with my turkey meatloaf... need ideas.

I made turkey meatloaf for dinner tonight and I usually make mashed potatoes and a veggie to eat with it, but I'm trying to cut back on so many refined carbs so now what? I LOVE my potatoes, but am willing to give them up or at least cut back on them. What do you eat with your meatloaf besides veggies(which already takes up half of my plate). Thanks! :)

    maybe switch to sweet potatos?
    Or instead of just plain veggies make a tossed salad.

    You could try mashed cauliflower with somne low fat cheese:-)

    well maybe baked or steamed sweet potatoes to give you still the same feel for the meal.
    maybe some mashed cauliflower to have fake mashed potatoes?

    I would suggest mashed sweet potatoes, or sweet potato fries. Or mashed cauliflower. It is so yummy and tastes like potatoes. If you want to get rid of the starch all together make 2 veggies instead. Let me know if you need a recipe. :)

    Or roasted cauliflower. Toss bite sized pieces with olive oil, diced fresh garlic, salt, pepper and a sprinkle of parmesan. Bake it in one layer in the oven 'til it gets a bit crispy. Yum!

    I try and counter my desire for refined carbs by amping up the flavor of whatever else I am eating. I made this topping that I put on my meatloaf and I didn't even miss any of the normal side dishes I would have had before.

    Ingredients: (.25 cup each)
    Sundried tomatoes
    zuchini
    bell pepper
    garlic
    1 Tspice (this can be your heat of choice, or something super savory) I used smoked paprika and oregano
    1 T tomato paste

    Warm your spices and garlic on a pan with just a little oil. chop everything else up and add, tossing long enough that the zukes and bells cook down a little.

    Spoon on top of meatloaf (or chicken or anything else). It's a nice way to kick up the flavor/heat. I've also put this on spaghetti and its really good!

    If I really DO have to have a carby side, I go the cous cous or brown/wild rice route.

    Truthfully? More veggies. Try roasted cauliflower (you won't know it's cauliflower from the taste). Core a cauliflower and cut up into small pieces--each about the size of a 50-cent piece. Toss with olive oil (or your oil of choice) and sprinkle with salt and pepper. Spread on a cookie sheet and roast at 400-degrees for 15 to 20 minutes or until lightly browned and tender. Do not crowd on cookie sheet--you want them to roast, not steam. I can eat a whole head of this stuff because I find it as addictive as popcorn. You can also sprinkle it with other seasonings when you bring it out of the oven--just watch the amount of salt you add if you also add a seasoning salt. I use spice mixes that don't contain salt.

    When I focus on eating more vegetables and less white carbs, I find it helpful to make sure the textures of the vegetables vary. So if I have meatloaf with green beans, I'll make sure the other vegetable has a different texture--maybe a pureed veggie or a salad or zucchini ribbons (which are good hot or cold if properly seasoned) or a cucumber salad.

    If you really like the texture of mashed potatoes, you might want to try making hummus and heating it up as a side dish.

    It doesn't. Not in the slightest. But it's a decent substitute the the percentage of carbs/calories it is in comparison.
