Meal Prep

I would love suggestions how to meal prep for lunches for the work week. I always get so overwhelmed that I have not even done it yet. Not sure what to make or how much. Do any of you out there have any tips/tricks for me?

    My first step was making a dinner meal plan. I would the plan to have an extra serving of dinner that I could pack for lunch. If that didn't work (especially difficult with teenagers), I always had my fall back of cottage cheese on a chopped salad( carrots,celery, cucumbers & tomatoes).

    Great pic -- cute baby! :) I spend a couple of hours one weekend and make about 2 dozen breakfast burritos, wrap them individually, and put in the freezer. About twice a week I just grab one of those for lunch. It thaws in the time before lunch, then I heat in the microwave. Also I'll make a big pot of vegetable soup on Sunday then store in lunch-size serving Tupperware bowls. Grab & go. And sometimes I'll make a big pot of oatmeal on the weekend, and make a bunch of serving-size containers to go -- works for breakfast or lunch. :) These are straight up easy to do, given a couple of hours on a Sunday afternoon.
