Cooking...its possible!

Okay, so I started in Oct. of 2010 on MFP...and I could not cook. I could burn water! lol But constantly eating out, or trying to buy microwavable meals just wasn't working out. So I just sucked it up, and TRIED to cook.

Started out pretty shaky (and I still can't seem to cook fish:grumble: ...it makes me want to cry every time I do...but I will figure it out some day). I had a lot of ... "ooo...yuck....looks like we're eating subway tonight" days in the beginning. My grocery bill went up, I was stressing because food was too expensive, my sodium was too high making me bloat like a balloon.

BUT...I'm getting better. I've learned how to pre-make some things and store them for later. Which has helped my grocery bill a lot. (You can't beat 6 lbs of re-fried beans for $1).

I can actually cook REAL food now. Like actual recipes from scratch! Its amazing! Who knew I could go from only knowing how to use a microwave to using a grill! (with some help from my husband who still fears I'll burn down the house...but HEY its improvement :laugh: )

So this isn't exactly a before after weigh-loss...but because I LOVE pictures...I still wanted to post some before afters. LOL

I've seen a lot of people post who say they don't know how to cook ,or don't have time. I just want to say it does get easier to fit in and you get faster/better at it with practice. :bigsmile:

    For some people cooking comes naturally and others it takes work. Thank you for sharing your success tackling the kitchen on this journey. Fish is something that is hard to cook but I thought I would share a recipe that I personally love that makes fish super easy.

    And I too agree... with lots of practice I have turned into a pretty descent cook myself!

    The thing I have learned with fish, is to flip it once. and cook on a lower heat. that way you can have more prep time to watch it and what not. :happy:

    Sounds good! ...is Orange Roughy the type of fish?? (I don't live on a coast so kind of limited on whats out there sometimes lol).

    I totally agree! People always ask me how I learned to cook so well... And I tell them my mom was in the military and my dad is a terrible cook! It was a necessity and practice makes better food :) At first, you are burning ramen noodles. Now I can whip up a meal with whatever I have on hand and my boyfriend goes :D:D:D (even though it is good for him! hehe)

    I post a lot of the recipes I try in my blog (like the meat loaf cupcakes) because I wanted somewhere to find them easily when I wanted to make them again. At first I was just posting on the boards...but I noticed after a while I couldn't find my own topics :frown: Or I would save them to my bookmarks and something would happen and I'd lose them...and it seems like once you find someone online you can never find it again!?

    So I started putting them in my blog for safe keeping...and well to share my crazy adventures! haha!

    Orange Roughy is a type of fish though I have used cod with this and my friend also used rock fish. It works with any mild white fish so use what you can get that is my moto. It is super simple. I buy low fat feta and put that on the side. I have also gone to adding zuchini and yellow squash with it.

    The main thing with this recipe is that if you can get a thinner peice of fish it works better then the thick steak like peices.

    meatloaf cupcakes is just meat loaf made in a cupcake tin for portion control, then topped with mashed potatoes as 'frosting' with food coloring. mmmm.
