Roasted Red Pepper & Feta Cheese Squares

Roasted Red Pepper & Feta Cheese Squares
Serves 10
Combination Main Dish
Ingredients:
1 tablespoon Extra virgin olive oil
1 Onion, sweet, fresh
2 cloves Garlic, fresh
2 1/2 cups Egg substitute, liquid
3 ounces Sweet bell peppers
1/8 teaspoon Black pepper
1/4 teaspoon Salt
5 Bay leaves
1/3 cup Parsley
3 ounces Feta Cheese Crumbles
Directions:
1. Preheat oven to 375F.
2. Crush or chop garlic and set aside.
3. Heat the oil in a nonstick skillet over medium heat
4. Cook the onions until soft and lightly browned.
5. Add the garlic, stir and set the skillet aside.
6. In a medium bowl, mix the egg substitute, roasted red bell peppers, salt, pepper, basil and parsley.
(If your skillet is ovenproof, pour the egg substitute mixture over the onions and garlic. Otherwise move the onions and garlic into a baking pan or souffle dish that’s been sprayed with nonstick cooking spray, and pour the egg mixture over it. Be sure to spray the sides as well as the bottom with the nonstick cooking spray.)
7. Sprinkle the crumbled feta cheese over the top.
8. Bake 18 to 20 minutes or until the center is set.
9. Gently use a knife to loosen the sides of the frittata from the pan or dish.
10. Slide the frittata onto a plate or cover the dish with a plate and invert the dish to remove the frittata.
11. Cut into small squares or wedges. Enjoy as part of your breakfast.

I put one bay leave in a coffee grinder that I only grind spices in. OR you can leave them out completely or used crushed bay leaves that come in a jar. Bay leaves are a bit strong and you might want to use less and experiment. It's up to you and your tastes, leaving them out wouldn't effect the nutrition part of the recipe.
