Low calorie meals for picky eaters?

Any ideas for some low calorie meals that a picky eater might actually eat

    I'm pretty open to things. It's my family that's picky. They will eat any sort of meat. Basic grains. Salmon. Some vegetables and fruits but nothing extreme.

    I have 4 kids who are picky eaters. This is how I handle it. I pick a protein: chicken, fish, pork tenderloin, any type of lean protein. If I happen to fry theirs, I bake or grill mine. But I try my best not to fry.

    I then pick a side they like and a side I like. This way there is a happy medium. I may make them mac n cheese but a roasted vegetable. As long as I have a meat, I can plan around it.

    Low calorie is easy. Exotic and nutritious is hard. You can make something low calorie just by serving less of it.

    If the family is hooked on chicken nuggets and pizza, reduce the portion reasonably and add a side salad. Put in cute things in the salads like restaurants do to make it interesting like shaved almonds, dried cranberries, cubed mild cheese, nuts, seeds, chinese noodles, croutons, goldfish crackers, and so on.

    Or you cook a family favourite with a lot less fat. Bread and bake the chicken instead of frying it.

    There are other ways to make vegetables fun. Have the children put the veggies on a skewer and roast them in the oven or on the BBQ. Serve cooked veggies with a cheese or ranch sauce.
