Cucumber noodles with peanut sauce is my first thought because you can use an entire cucumber in a meal for one. For the cherry tomatoes, we go through them so fast, but what about making some roasted tomato sauce or soup and freezing it.0

Make a salad: De-seed the cucumber and chop it up. Chop up some red onion. Half or quarter the cherry tomatoes. Add a small amount of olive oil, lemon juice, salt and pepper. Mix it up.0

I'd roast the cherry tomatoes and make sauces. Perfect thing to put in the freezer for quick dinners. Or maybe some relish? In cute jars it could make a nice home-made present too.

Split the cherry tomatoes in half, spread on a cookie sheet skin - side down (a little no stick spray oil will help) and then oven dry them in a low (250F) oven. Sweet and recipe ready!0

Tomato and cucumber salad may seem obvious, but it is very delicious, low calorie and quite adaptable. Just chop the cucumbers and halve the tomatoes, mix together with a little olive oil, balsamic vinegar and some dried herbs. I also add sweet peppers, onions and feta cheese if I have on hand. During the height of summer harvest we have some variation of this salad nearly every day!
You can also make a nice fresh salsa with tomatoes and cucumbers. Just add chopped jalapenos, onions, lemon or lime juice, and fresh cilantro. You can make it tropical by adding fruit (mango, peach) and diced avocado. Works best if you "seed" the cucumbers first.
If you have regular slicing cucumbers you can make refrigerator pickles. This doesn't work well with the lemon cukes, though, as they have too much water.0
