Smoothie Popsicles
I don't know why it never occurred to me to do this before, but it didn't. So, just in case it didn't occur to someone else - I'm trying to make popsicles out of smoothies! (haven't actually had one yet, but I'm assuming they'll be fine)
I just got a little 4-popsicle tray and filled it up with what I consider a 2-person smoothie and I'm freezing them for dessert tonight!
Tonight's smoothie-pop will be Peach, Mango & Strawberry, which is approximately:
1 c. frozen mango chunks (slightly thawed)
1 c. frozen peach slices (slightly thawed)
1/2 c. roughly chopped strawberries (fresh; I love strawberry season)
1/3 c. nonfat, plain yogurt
*Blend in a blender or food processor until smooth and dump it into the molds. Freeze!
For me this works out to be about 60 cal. each (serves four), but your molds and ingredients might be a smidge different.

The way I did mine turned out to be 60. But I'd do a recipe builder thingy on here if you do them to check, since different molds will hold different amounts, and you may want to tweak my recipe0
