Gluten Free Lunches

I'm on a bit of a budget and looking for some good gluten free lunches.
Usually I just take a small portion of my evening meal in to work - which is usually something and rice. I'm not that keen on gluten free bread, there are no facilities to make pasta at my work and it doesn't seem to keen after cooked to make a pasta salad. I'm not overly keen on normal salad either and a bit down in the dumps about lunches!!!

I posted this a while back. Quinoa is so versatile. My friend recently made a quinoa salad with black beans and tomatoes that was really good. You can probably Google for recipes.0 -
Hi, yes Quinoa is great and is easy to prepare in advance and cheap. Also you can get gluten free couscous which is actually rice based and is easy to flavor with anything.
I usually try a chicken or fish based mix with loads of stur fried veg, put it in a container and it will stay good in the fridge for 4-5 days. I t means eating the same thing for each lunch but if its balanced meal and you are here to loose a little then its no bad thing.
Also a pure pulse dish is great, you can use some spicy sausage to perk it up and use fresh coriander etc to add great flavor. Pulses are a great source of essential vits and mins and give you energy for the afternoon.
try making gluten free soda bread, its really easy and takes only 40mins from start to eating time....it wont last ages but tastes great and you dont get yeast bloat from it.
Also maybe try not to think of them as lunches without gluten instead they are healthy lunches with no stodge factor...fruit salads are great and perk you up no end...you are ready for dinner at the end of the day but thats fine.

i am not sure..I am in France and have purchased in an organic / health type shop...
not to sure about in the US0
