These are super yummy and a break from the traditional breakfast.

I use 3 raw asparagus spears instead of onions.

    I've been making tamagoyaki (Japanese egg rolls) for years. There's a few different versions, including sweeter ones, that you can find on the interwebs.

    If you don't want to put the veg in them, but still want something besides the egg, a sprinkle of sesame seeds and a dried herb of choice works well.

    I started messing around with these about 6 months ago. Was also looking for low carb breakfasts. I have put everything from zucchini to leeks, to broccoli, to spinach, to seaweed to kimchi in here and they all taste great!! I've also topped these with salsa and cottage cheese for a protein boost. Just pulse the raw veggies in a food processor or finely chop them up before adding to the egg mixture.
