Breakfast for dinner? Why not?!?
Who says you can't make a healthy breakfast for dinner??
Tonight's Breakfast for Dinner: Baked cauliflower/pea/cabbage/parmesan 'fritters' + avocado/chilli mash + bacon + tomato + parsley + rocket + dukkah. Why not, so yum
Yummy new combo, let me know what you think if you give it a try
Or if you have more 'Breakfast for Dinner' ideas I'd love to hear them!
Ps. You could add a poached egg or two if you wanted to bulk it up. Or alternatively, remove the bacon to make it vego, and/or the parmesan to make it dairy free.

Ps. I loved this so much I just scoffed a second! At only 280 calories per serve, all healthy, why not! Such a fully satisfying dinner. And I've got two spare 'fritters' in fridge to reheat for tmrw yay!0
