Easy CrockPot Spinach-Tomato (and other veggies) Soup
Made a really yummy and super easy low-sodium vegetable soup in the crock pot last night and wanted to share the recipe (that I got from my sister). I'm guessing there are variations on this out there all over the place, but don't see the harm in sharing one more! Enjoy!!
10 oz spinach, baby, washed
2 medium carrot(s), chopped
2 medium stalk celery, chopped
1 large onion(s), chopped
1 clove garlic clove(s), minced
4 cup vegetable broth, low-sodium
28 oz diced tomatoes, no salt
1 can kidney beans
1 can garbanzo beans (drained)
2 leaf bay leaf
1 Tbsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes, crushed
Place all ingredients in a slow cooker. Cover and cook on high for 5 hours. Remove bay leaves, stir and serve. Yields about eight 1.5 cup servings.
As prepared last night (using exact weights for the carrots, celery and onion) each serving of the batch that I made contains:
Calories: 177
Total fat: 1 g
Cholesterol: 0 mg
Sodium: 296 mg
Potassium: 571 mg
Total Carbs: 33 g
Fiber: 10 g
Sugars: 7 g
Protein: 11 g
