Welcome to the thirty-third round of the cooking challenge! This week's ingredient comes to us from wonnder1, the winner of the bell pepper cooking challenge.

This week's challenge is LEMON.

These are the rules for the challenge:

1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.
4. You do need to post the recipe you used so other people can try it too, if they so please.
5. If you used a recipe from another source give credit to the original creator!
6. Your recipe can be a breakfast, lunch, dinner, snack, or dessert! Anything!

    Not the most complicated thing, but Summer is the time for uncomplicated!

    NAME OF RECIPE: Strawberry Lemon Smoothie
    INGREDIENTS:
    7 large strawberries (a little frozen)
    6 oz Lemon fat free yogurt (personal size) (Danone Light and Fit)
    1/3 c. Orange Juice (Trop 50)
    DIRECTIONS:
    Throw it all in the bullet, or blender

    Low Fat Lemon Chicken Picatta


    Ingredients


    6 boneless skinless chicken breasts, pounded thin
    flour (for dredging) (opt) veggie cooking spray 1 Tbs margarine
    2 Tbs flour
    15 ounces chicken broth shopping list
    1/2 cup white wine (or you can use more chicken broth)
    juice of 1 lemon
    1 Tbs parsley
    1 Tbs capers
    artichokes (opt)
    mushrooms (opt)
    whole wheat pasta

    Coat large skillet with cooking spray & heat over medium-high heat
    Dredge chicken lightly with flour (I sometimes omit this step)
    Cook chicken until no longer pink (3-5 minutes)
    Remove chicken and keep warm on a plate
    Melt margarine in same skillet
    stir in 2 Tbs flour
    heat over medium 1-2 minutes
    Stir in chicken broth, wine and lemon juice and heat to boiling
    Stir until thickened (1-2 minutes)
    Reduce heat and simmer 15 minutes until sauce consistency
    stir in parsley
    return chicken to sauce over med-low heat, spooning sauce over chicken, until warmed through
    Serve over your favorite pasta
    **I sometimes add artichokes and mushrooms, and fresh garlic is delicious in it as well!
    PER SERVING: (without artichokes and mushrooms, using white pasta)

    I got this Honey-Lemon marinade (and slightly adapted it) from Rachael Ray about a thousand years ago. It is my favorite - light and delicious. I use it to marinade boneless skinless chicken breasts for a few hours in the fridge. Then I grill the chicken (although you could bake it also). Yummm!!

    This makes enough marinade for four to six chicken breasts.

    Juice and zest of 2 large lemons (or 1 large lemon and 2 medium limes)

    5 tablespoons honey

    4 teaspoons finely chopped garlic

    4 teaspoons ground cumin

    3 teaspoon dried oregano

    5 tbsp extra-virgin olive oil

    Salt and freshly ground pepper

    Edited to add nutritional info:
    Assuming 6 servings of 4oz chicken each (and it calculates as if all of the marinade is consumed, so the actual is probably less since at least half of the marinade is thrown away):
    Calories: 201
    Carbs: 3
    Fat: 15
    Protein: 21
    Sodium: 243
    Sat Fat: 3

    NAME OF RECIPE: Grilled Lemon Herb Pork Chops

    INGREDIENTS:
    1/4 cup lemon juice
    2 tablespoons vegetable oil
    4 cloves garlic, minced
    1 teaspoon salt
    1/4 teaspoon dried oregano
    1/4 teaspoon pepper
    6 (4 ounce) boneless pork loin chops

    DIRECTIONS:
    Place all ingrediants into a gallon ziploc bag, seal and make sure marinade is evenly distributed over chops. Marinate at least 2 hours but overnight is better and more flavorful. Turn the bag on occasion to distribute marinade evenly.

    Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.

    Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.

    CALORIES PER SERVING: 131

    HOW MANY IT SERVES: 6

    OPINIONS ON HOW IT TASTED, ETC: These were the best, most flavorful pork chops I have ever had! The bright freshness of the lemon with the garlicky background to it was amazing! And the amount of time they suggested was just perfect to make a juicy pork chop although I would recommend a meat thermometer (160 degrees F for pork)
