Struggling to meet caloric goal

On most days, I find it hard to meet my 1200-1400 calorie goal a day, even more so when I have my big workout days. I get to about 800-850 calories and I have to FORCE myself to eat another 400 or so calories. I just don't understand why this is.

Is all your food horrible? Too tired and lazy to cook?
How about easy stuff to get in the calories like milk + cocoa or protein powder or something.
Low effort for both making and consuming.

Your diary is closed, but my first guess would be that you are eating low fat foods. Cook one serving of vegetables in olive oil, drink a glass of whole milk, and have a handful of nuts. BAM - 400ish calories.

Cow's milk doesn't do nice things to me. I feel sick if I have high fatty foods ever since I had my goal bladder removed. It's so frustrating

And you still have 51 lbs to lose? What did you eat to become overweight if you sometimes can't even reach 600 calories now? Can you add some of the things from before, obviously in lower quantities?

It looks like you're just short today. Try nuts, nut butters, cheese, avocados.

I can't eat a lot of the things I ate before, due to my gallbladder. I ate a lot of fried foods back then.

I had my gallbladder out a couple of years ago. I thought it was the fat that was causing my issues, actually it turned out to be the acid reducer my physician prescribed. When we switched to another medication, my problems greatly decreased. I still space out my fats through out the day. I do fine with 8-12 grams of fat per meal or snack. Nuts, olive oil, eggs, avocado and meats work well for me.

My best advice to those who feel they can't eat the calories is to drink 'em. Juice, smoothies, milk, etc. Those calories add up easily.

You might find some ideas to add to your diet here, though you'll have to filter out the foods that give you issues without a gallbladder: http://community.myfitnesspal.com/en/discussion/10142490/a-list-of-calorie-dense-foods/p1

Ah yes! Forgot about those things, I don't drink (dislike the tipsy feeling) so suggesting them doesn't come naturally to me. :)

Is that why you find it difficult to hit your calorie goal? Because you feel sick?
Your diet often includes chips, donuts, cookies and other higher fat foods. Maybe cut back on those and your appetite for other food will increase.

Also, I'd take a look at your logging. You have a lot of take out food which can be hard to estimate properly. You also have cup measurements for stuff like pasta. Pasta is calorie dense and cup measurements can be pretty inaccurate.

My point was avoid the "unhealthy" things and maybe you won't feel sick.

Yogurt is something I can always eat, even with my (acid) stomach issues. Maybe try a lower-fat Greek yogurt (Greek for the extra protein)? There are all kinds of flavors, and most are sooo good! Some taste like dessert :)
