Looking for outdoor party food...

Having a get-together for a friend's bday later this month and we're all bringing something. I want to bring something healthy, but I DON'T want to bring hummus, or a boring veggie or fruit tray, AND one of the kids is allergic to strawberries. Anybody have any FUN recipes that are low-cal? :happy:

    How about the pickle roll ups? Baby dill rolled up w/ a lil low fat cream cheese spread on a slice of buddig corned beef. They always go over big!

    Fruit is not so boring if you make an edible arrangement! It is so easy and gets a LOT of attention. Just spear different colored melon cubes, strawberries, different kinds of grapes, fresh pineapple, etc on thin wooden skewers and poke them into a melon half--it is as colorful as flowers and everybody wants to grab a stick. You can add a whipped dip--I made one that was yummy with marshmallow cream but hardly anyone wanted it.

    My husband makes this wonderful fruit salad. Its just an assortment of fresh fruit, tossed with a little pinapple juice to preserve color and then he sprinkles in cinnamon and a *tiny* bit of clove spices to taste. He avoids using melons in the salad though, because they don't mesh with the cinnamon flavor as well. Fruit he uses are apples, grapes, blueberries, strawberries, mandarine (or other small) oranges pealed into the sections, etc. Have fun with it!

    grilled or baked asparagus....bake it in olive oil and garlic for 7-20 mins depending on the thickness

    Kabobs, even fruit ones for dessert

    Fruit kabobs - we had them as an appetizer at our wedding and the kids went bananas for them.
    You could also do mini sandwiches (turkey and avocado, ham, etc...) on sandwich thins and cut them into little triangles.
    I'm a fan of veggies and hummus myself - sugar snap peas, cucumber, carrots, celery, bell peppers, broccoli.
    Wasabi peas are great if you can maintain portion control.

    I have not tried it yet, but I'm definitely going to try salt and vinegar baked Kale this week (just google it there are hundreds of recipes). I'm told it tastes a lot like salt and vinegar potato chips (or crisps for the Brits in the crowd.) but with ZERO guilt as there's only one tblsp of olive oil on an entire batch. Please, please, please let it taste as great as everyone says!
