Looking to replace pancake mix to a healthier, high in protein substitute. Please share :)

    I've made these two-ingredient pancakes a handful of times. I was skeptical at first, but they're actually pretty good. I do use a bit of coconut oil in the pan.

    Here's a recipe I found on Pinterest (of course) and it's really good:

    1/2 Old Fashioned oats
    2 Eggs
    4oz Cottage Cheese
    teaspoon Vanilla Extract
    1/4 cup dark chocolate chips

    Blend everything except the chocolate chips (I use a Magic Bullet). Add the chocolate chips (or whatever else you want to add in) and cook like regular pancakes. The whole recipe is 4 pancakes and about 450 calories. You can save some calories by using 4 egg whites instead of 2 whole eggs (that's what the original recipe called for), but I don't like the consistency of the end product. Without the chocolate chips, the pancakes don't have much flavor, but if you leave them out, you'll also save some calories.

    I cook these almost every weekend and share them with my daughter who loves them (mostly because of the chocolate). Because of the high protein content (30 grams for the whole recipe with my alterations), it makes me feel better about feeding them to her :smile:

    I like Arrowhead Mills Buckwheat pancake mix. I add PB2, flax seed and an egg to add protein, fiber and flavor. Best of all, they taste like pancakes, not "diet pancakes". Even my grandsons like them.

    I've subbed protein powder (vanillla) for the flour/sugar and it surprisingly was not that bad!

    Quest makes a protein powder that's a baking substitute.

    I use oatmeal flour. I would also add 1/8 cup protein powder and 1/4 cup regular flour.

    1/2 cup oats - ground in a food processor
    1 ripe banana
    1 scoop chocolate protein powder
    0.5 tsp baking powder
    1 tbsp PB2
    2 egg whites

    1 - Mix all ingredients well by hand or food processor.
    2 - Cook like a regular pancake on a medium griddle. Makes about 4 medium-sized pancakes (which is 1 serving for me. lol)
    3 - Enjoy your banana-peanut-butter-chocolate high-protein pancakes :)

    ^^all sound good.

    Mine is similar to some, I think it's really easy:

    5 x whole eggs, whip em up
    1 x cup of oats

    Blend it all up

    You can do 1/2 oats...anyway, it makes about 3 x good sized pancakes, then I smear something sweet on them, almond butter or some jam, whatever makes you happy.

    And drink water people!

    There's just no point in eating pancakes without it! For me, there's no such thing as "healthy" pancakes after all the butter and syrup I load on them, but at least it's real butter and syrup. I guess that does make them healthier than if i used margarine and fake wannabe syrup.

    I just have a quick recipe, 3/4 cup all-purpose flour, 3 tsp baking powder, 1 egg, 1 cup of milk (I use whole but any kind would work) and 1 tablespoon of oil. I use coconut. Mix the dry ingredients in one bowl, the wet in another then combine everything and mix just until everything is wet. (Mixing too much results in flat pancakes.)

    Makes the fluffiest awesome pancakes ever. But best when topped with about 600 calories worth of butter and syrup. :)

    Target just started carrying these. They also have a microwave version that takes 1 minute. My kids love them and they are high in protein (more if you make it with milk instead of water).
