how to measure 1 serving of homemade mexican rice

I'm making homemade rice to go with tacos for my dad and I tonight. I got a recipe for mexican rice from allrecipes.com that I discovered on pintrest but I'm kinda confused when it comes to how much 1 serving of rice for myself is supposed to be after its prepared and I'm ready to eat it. I plugged in the recipe to myfitnesspal recipe creator and it said its 5 servings on the website and it shows up how many calories it is but it doesn't tell me how much rice is 1 serving..it just says 1 serving..is this many calories. How should I determine how much rice to eat?

    Weigh the entire cooked dish minus the pot and divide by 5. That is what the recommended serving size is. Or, divide it by number of grams and you can scoop and log whatever you eat.

    How much rice does the recipe call for and is there added fat (oil, butter, etc)? What does the recipe say is the number of calories per "serving"?

    The recipe calls for 1 and a half cups of rice andthere is no butter but 2 tablespoons of canola oil

    Assuming you can't get a scale for tonight, I would think that 117 calories is between 1/2 - 3/4 a cup cooked....this is just a guess.

    If you can't weigh it, do you have measure cups to find out how many cups come out in the final product. Less accurate than a scale, but better than a total guess.

    I don't have a scale or currently have the money to buy one but I do have measuring cups I can use..thats all I really have to measure my food

    Get a pentagon-shaped pie pan. Spread the rice in the pie pan evenly. Cut a line from the center of the pan to each of the corners. You should have five "slices" of rice.

    No scale, I would just put it into 5 equal containers...but definitely get a scale! They're under $10

    Use your 1/2 cup measuring cup to serve the rice for you and your dad and then measure out the remaining cooked rice. Uncooked rice usually doubles when cooked, so you should end up with about 3 cups of rice or 6 1/2 cup servings.
