Do you have any meal prep ideas for the week? What's your favorite and why?

I start with a peek in the refrigerator and a roast. I may plunk the ingredients in to Pinterest to see what comes up.
Right now I am working on a pinto bean stew. The stock which I made tonight came from roasted chicken bones I've been saving in the freezer. The beans were soaking already. I put some dehydrated shiitake mushrooms in with the beans to rehydrate while I was at it.
I am spicing this one lightly. So far I've added celery and coriander.
I will add a variety of root vegetables with onion, beans and mushrooms to the slow cooker in the morning.
The veggies I had on hand include tomato, turnip, sweet potato, baby potatoes, and carrot.
I think I will take out a cup of beans and veggies after this is cooked and blend it before adding back in to the stew to thicken it.
My favourite thing is to work with what I have and be a little creative. This stew should only improve with reheating. We'll have it tomorrow night with crusty buns then I will put the rest in mason jars for lunches.0 -
