I bought a 1/2 bushel of red sweet potatoes about a week ago and need some healthy recipes.

Honestly a cooked sweet potato topped with almond butter and a little salt is the best way IMO!!0

Roast, peel, mash, and mix with a little lime juice and chipotle peppers, top with a little plain yogurt

Peel, slice thin, salt and bake at 425 for chips0 -
I just bake mine for about 75 minutes (at 350), the let them cool a bit. Scoop out of the peeling and eat. So so so good!0

Honestly, the red ones are delicious baked by themselves. Cook them for 75 minutes at 400, wrapped in foil. Then split in half and drizzle honey and maple syrup on top and sprinkle with cinnamon. If you've got the red ones, it'll taste as good as candy.
Or, after baking them, you could use them as a replacement for pumpkin in pretty much any recipe. You may be able to reduce the sweetener in the recipe since sweet potatoes are sweeter than pumpkin.0 -

My recipe is a WINNER. Wash and dice the sweet potatoes, spray with olive oil and add garlic salt (if you prefer low sodium then add Mrs dash garlic and herb seasoning), pepper and Italian herb seasoning. Toss them til they are all covered, Then bake til soft. ENJOY0

Sweet potato quinoa chili or stuffed sweet potato mexican style (corn, onions, black beans, tomatoes etc). On heavy workout days sometimes I dice and spice then bake and throw in breakfast burrito with eggs, beans, tomatoes, onions, etc. great as a side like wedge potatoes with salmon. Can go sweet and spicy with cinnamon and cayenne etc. tons of ideas out there!0

Sweet potatoes are amazing by themselves, but you can peel and mash them, add a teaspoon of brown sugar, or just a little bit of pumpkin pie spice! Makes it to almost a dessert. You can also make baked sweet potato fries that are really yummy. But yeah, honestly I think they are great on their own.0 -
I made a FAB side dish with sweet potatoes this weekend!
Peel three sweet potatoes and slice them thinly, about 1/8 inch each. Mix up your spices--1 tablespoon of brown sugar, 1 teaspoon of smoked paprika, and just a pinch of garlic powder, cayenne pepper, salt, and cracked pepper. Drizzle olive oil over the potatoes and then coat with your spice mix, tossing the potatoes so they get coated evenly. Stack them in a small casserole dish, like playing cards, cover with tin foil, and roast in the oven (400 degrees) for 30 minutes. Uncover and cook another 15. I enjoy cubing mine and adding them to lentil curries. Or just currying them by themselves and throwing in a big handful or two of mustard greens, spinach, or kale. Super tasty.0

Question though, do you weigh them before or after cooking and count the calories?0 -
Roast them as a side dish, whole, cut up or cut up with other veggies.
Roast or boil then mash
Add to soup or chili
Fry some up and scramble with eggs

I absolutely love this African Peanut Stew and also this Leftover Roast Chicken Soup Although neither is SUPER heavy on sweet potatoes, they both freeze very well in portions so that you have 2-3 months to eat them.0

I pretty much only roast them with some olive oil and salt.
It's funny--I spent years trying to come up with a good recipe for them and then I realized I love them cooked the simplest way.
I hate all recipes that involve mashing them or adding sweetness.0 -

I'd roast half of them, mash them, squish them in to my muffin tins, and freeze. I would then use them in recipes through the winter.
The rest I'd cook in various ways as described by others.0 -
I like mine with an over medium egg on top.
I cook it in the microwave for 5 minutes, cut it up in cubs and saute it for 2 minutes in coconut oil and put my egg on top. So yummy! !0 -
im a little weird, but i like mine with a little butter or garlic oil, cinnamon, cayenne and chilipowder0
