    Have you tried spaghetti squash? I tried it a couple weeks ago, and I'm hooked. Use it in a dish like you would pasta. It's sweet so it doesn't taste like a vegetable to many people.

    Mostly though I don't cook vegetables as a side. My son is a vegetarian, so I cook a lot of vegetable based main dishes.

    and add whatever is in the fridge, cauliflower, zucchini, carrots, yellow squash, green beans etc.

    Ditto. I usually create a one dish meal around my vegetables. I also mix shredded or finely chopped vegetables into just about everything: stew, chili, casseroles, nuggets, meatballs, burritos/enchiladas, burgers, and I base sauces on pureed vegetables (like pureed cauliflower mixed with extra sharp cheese to make macaroni and cheese).

    Another idea is to make stuffed vegetables like stuffed eggplant, peppers, spaghetti squash, zucchini, tomato, etc or trying "noodled" vegetables. You can use a vegetable peeler to try it out instead of buying it.

    I am the same, i hate most veggies. Its more the texture that i cant stand.
    This past weekend i made spaghetti squash and made "squashbrowns". I seasoned them with a bit of salt and pepper and garlic powder, and fried them in a bit of olive oil. It was pretty good.

    I'm a big fan of www.vegweb.com (not affiliated) and find that it's a good place to go for a whole host of recipes to suit any need or purpose.

    Also, I bought a little tool that turns veggies into "noodles". Only cost about $10 I believe. I use it for zucchini (Italian squash). Tastes great sauteed with a touch of olive oil and garlic, topped with a little tomato sauce and hot Italian turkey sausage! :)

    There are huge differences in single veggies depending upon how they are prepared. So it really benefits you to try each veggie several different ways.

    Example: green beans

    Canned - to me these are just nasty

    Frozen - A step or 2 up from canned. The flavor is good, but texture is not quite right.

    Fresh, steamed - awesome!
    Fresh, grilled - also excellent!

    I agree with other posters.........try roasting veggies. I'm normally not a fan of Brussels sprouts....pretty good roasted.

    Blanch your green beans for a couple mins in some mildly salted water, put them in an ice water bath, then sautee in a little butter and garlic. Delicious! :)

    Sauté some onions and broccoli slaw in a little olive oil or cooking spray, then add some tomato/pasta sauce. It tastes like vegetable spaghetti (I mean that in the most delicious way possible).
    Also, just raw veggies (carrots, celery, snow peas, cucumber, etc) with hummus is a nice go-to snack
