i need some help, I'm a type 1 diabetic who has gained a lot of weight like 15 lbs since March. I'm very very picky eater and need some help with what to eat that is low carb for meals and snacks. I really do not eat a lot of meat, no red meat. But I have a big problem trying to find some good healthy low carb lunches. Please help!!!!!!

    Picky when it comes to meat? do you like veggies and fruit?

    Yes I love fruit and veggies, just get tired of certain foods after a while.

    A couple things I have done was replace my pasta with zucchini and or spaghetti squash, replaced potatoes and rice with cauliflower, garlic mashed mock potatoes (cauliflower) is awesome. You can make many things with zucchini and cauliflower, pizza crust, flat breads etc. Just think of a recipe or food you like and google for good healthy recipes. Also skinnytaste.com is a great site for some awesome recipes. My stepson is type 1 diabetic and just found out he has an allergy to dairy, so I am always looking for recipes.

    I do a lot more cheese now. And nuts if I need the calories, too. I eat peanut butter nearly every day --the natural kind with no added sugar.

    I don't like meat so often, either, but I have to admit that I get a lot of my protein from low-glycemic but high-carb beans. I eat vegetarian chili sort of dishes often. I don't know how that works with anyone taking insulin (for the dosage), but it might be helpful if low-GI could work for you, too. I still eat most fruit, most whole grains, etc.
