Low calorie vegetarian/vegan recipes!

I’m always on the hunt for a good low calorie vegetarian/vegan recipe.
You share yours and I’ll share mine!
This is my own creation and I had it for lunch today. It travels well and is great leftover.
Curried tofu & root veggies
Ingredients:
Tofu Extra Firm, 1/4 package (should be 100 calories)
I Can't Believe It's Not Butter Light - 1 tsp 18 calories
Mr Spice - Ginger Stir Fry Sauce, 1 Tbl 15 calories
Spices - Curry powder, 0.25 tsp 2 calories
Blue Diamond Almonds – vanilla - Unsweetened, 0.5 Cup 20 calories
Carrot - Small (5 1/2 Inches), 50 g 20 calories
Rutabagas - Raw, 0. small 41 calories
Parsnips, 0.63 cup slices 69 calories
Method:
Melt the margarine in a skillet over medium/high heat. Cut all the veggies into bite sized pieces and add to the skillet. Let brown slightly (5-7 mins), stirring occasionally. Meanwhile press and cut tofu into cubes. Once veggies have begun to brown add the tofu and continue to cook.
In small bowl combine almond milk, curry spice and stir fry sauce, mix well.
Once tofu and veggies have reached desired tenderness reduce heat slight and pour sauce over evenly. Simmer on medium/low heat for another 5 mins or until sauce has thickened and coats well.
Remove from heat and pepper well. Allow to set for a minute or two and then enjoy!

A few of my favs...
Steamed lemon tofu with steamed collards and quinoa:
1 block extra firm tofu
1 lemon
1 bunch collard greens
White or red quinoa
Cut the tofu into small cubes and place in pot. Squeeze enough fresh lemon juice into pot so that the tofu can steam without sticking to the bottom. Steam for about 4-5 mins.
Typically, I would be steaming the collards at the same time. The quinoa I would have prepared ahead of time as that takes around 45 mins to cook.
I then layer everything in a bowl. First the quinoa, then the collards, then I gently place the tofu on top. Whatever lemon is left in the pot I then drizzle over everything.
Brown rice with sauted veggies and beans:
Short grain brown rice
Red kidney beans
Shallots
Leeks
Celery
Red, Green and Orange peppers
Cook the rice first as that will take around 45 mins.
Saute in olive oil the shallots, leeks, celery and peppers. Once cooked, I then throw in the beans and leave covered for a few minutes to absorb all the flavors. This is really tasty and super filling.0 -

Do you get Quorn products in Canada? They are really low in fat and great replacement to traditional recipes.0

I've never heard of Quorn, so probably not. But we do have a line called Yves veggie cuisine- or just Yves which makes the same sort of things.0
