My Gnocchi

I have never made this nor have I ever even tasted it, but looked interesting so.. What the heck.
I made the Gnocchi using
2.5 lb of potato
2.5 c of Flour
1 egg
some garlic powder
salt & Pepper
for the sauce I used
1/2 cup of onion
2 tblspns of olive oil
some sage
1/4 cup of flour
2 c milk
some wine
salt & pepper

So you gotta rice your potatoes and if your like me and dont have this tool you will simply shred them with your shedding machine.
When they are nicely cooled make a bowl out of them on your counter
I placed the flour in the middle and added the garlic salt and pepper then made another bowl
I added the egg to the middle and whipped it then mixed it with the sides and began to knead it into a ball. Ay first I thought it would never form and that I was going to havta add some more liquid but eventually it did form0 -
So then I formed it onto a roll and cut it into four, each piece of four I rolled out into a long roll about 3/4" thick.and cut it into 1" peices I sprinkled them with flour to keep them from sticking

So I placed them on a tray and then boiled them in small batches until they floated about 4 mins. Then cooled them in cold water and placed them in a bowl with some olive oil

To make the sauce I simply made a basic white sauce..

So I dont think it has enough flavour, gonna make a chicken sauce to add with it.0

Question: Do you cook the potato before you shred it? You mentioned above "When they are nicely cooled".

Yes cook them whole with the skins on and peal them and shed them after.0 -
