Dietary restrictions and working full time

Anyone else have diet restrictions? I am gluten and lactose intolerant and find myself being ill a lot. I need to find easy recipes that take little time to prepare... working full time leaves little time for cooking and I'm trying not to eat out or grab convenience foods full of gluten and dairy ingredients.

I find being gluten free that my meal packing for the day is fairly simple. I just stick to whole foods instead of trying to create recipes because it is faster some days. I leave the recipes for the weekend when I can play. I don't work full time, more like 3/4, but add in 3 kids, volunteering, hoby farm, and workouts and I am away more than home. I tend to pack for up to 16 hours away from home 3 days a week and smaller amounts the other days. My basics are whole fruit, homemade pkgs of oatmeal that I can add water to and microwave(I measure out my oats, a bit of powdered milk, and a spice or two and if I have dried fruit or some nuts will add that too. Then into a ziplock and into my bag). Lots of cut up veggies, Greek yogurt cups, they can go a few hours out of the fridge, canned tuna/sardines, granola to top my yogurt with, etc. occasionally I will heat up my thermos and then pack it with leftover soup/roasted meat and veg/casserole. I have only one choice of restaraunt food in my small town and the only thing I can safely eat is egg foo young with no sauce. So I don't bother very often.

Packing means I haul around a lot, especially when I include water bottles and tea thermos, but so worth beating the cravings or hunger that goes with not packing enough.

Meal prepping and lugging food around with you. Stashing foods in your desk/workplace that are yours and you can eat quickly.

Thank you! I pack a lot and was quite successful doing the 21 day fix that i managed to extend to 64 days before stopping. I need to just start that up agaun.

I do this a lot and talked my employer into my own fridge in my office.... I feel like a hoarder occasionally but have found myself in a rut eating the same things over and over again.

    Batch cook at the weekend

Big stews or casseroles ...take in heated thermos or microwave at work

Can you tolerate rice? If not eat over salad leaves for added bulk
