Hey guys!
I've already posted some of my pictures, but a few weeks have passed & obviously I've gotten around to eat and cook more.
My pictures are taken on a camera phone, so excuse the bad quality.
The recipes aren't my own, so I've included the links.
I tweak the recipes to suit them to my taste and calorie budget.

    Those look great!

    If I may, here is what I made for supper last night. It's a Southwestern spinach salad. Earlier in the week I put a few boneless, skinless chicken breasts in the crock pot with a cup of chicken broth and a package of taco seasoning mix and let it cook. By the time it was done, the chicken was tender enough to shred [kind of like pulled pork] and the sauce had thickened. I had enough meat to use for several different meals.

    For the Southwestern spinach salad, I used spinach, corn, diced tomatoes, a little bit of reduced fat Mexican-style shredded cheese, a couple of dollops of fat-free sour cream, a little bit of the chicken, and some taco sauce on the side. It was very good!!
