Eggplant

As part of changing the way I eat. I am picking up either a new fruit or a new vegetable each week to try integrating. This week I picked up eggplant. Does anyone have any healthy but tasty ideas to prepare the eggplant.

I know how to drop it in egg and flour then fry it in a skillet...but that's not too healthy. I'd like new healthy recipes too!0

I love eggplant but when you get it in restaurants its usually not that healthy. I was amazed when I just sliced eggplant on my own and sprayed it with dressing spray (honey mustard or ranch or italian, whatever) and baked it in the oven- so so so good! You really could just season it lightly with almost whatever you want and it still turns out tasty.0

After it's done put it under the broiler with tomato sauce and light mozzerella cheese and it's an amazing main course!

i like to cube it (skin on) put in saucepan, with stewed tomatoes, onions, mushrooms, minced garlic, and some italian seasoning.
Cook slow for 20 mins. or so, till everything is tender.

I am doing something similar. Trying a different item I've never tried every couple of weeks so that I'll eventually build my knowledge of what I like instead of avoiding foods simply because they look weird or because I don't know how to cook them.
I found a site called "AllTheCooks.com". I's also an "ap" for my Droid. You insert an item and it gives you loads of recipe options. I entered Eggplant to see what pops up and there are multiple recipes -- who knew?
