Sugar

This may be a stupid question but I'm making a red wine reduction that has sugar in it. Since I reduced the volume by half, does the amount of sugar reduce or should I still account for the amount of sugar I added when logging?

I assume it would be reduced by half.

and unless you have a medical condition that makes you sensitive to sugar there is no reason to worry about the amount of sugar in your sauce...

In this case, the reduction, and burning off some alcohol would affect total calories in the end, so I can see how it would be useful to know, but correct, sugar itself is unimportant unless you have a medical condition

..unless, maybe she'd like to log accurately?

A reduction would reduced the water content and of course, alcohol cooks off but that wouldn't change the sugar content. You'd have the original amount you added in the finished product.
  • Thanks for the info everyone.

It would be so lovely if sugar reduced as the liquid does! Sadly, that is not the case. :(
