I make a recipe and eat it for 5 days of lunches. This is a recipe I really like so wanted to share.
Versatile - change the veggies as you will! Originally had mushroom but I changed for broccoli!
2 lb(s), Chicken - Boneless Skinless Breast
1 cup julienne carrots, Julienne
1 cup chopped (91g), Broccoli (substituted for Mushroom)
0.25 Onion, Vadalia (substituted for green onion)
3 cloves, Garlic, raw
0.50 Peppers (14 grams), Jalepeno Peppers
2 Cup Raw (109g), Napa Cabbage
3 tbsp, Lite Soy Sauce, divided
3 Tbsp (15 ml), Rice Vinegar
1 tablespoon, Peanut Oil
1 container (2 cups ea.), Bean Sprouts, Canned
28.40 ounce, Udon Noodles (ethnic aisle of supermarket, comes in a 2 pack, cook in microwave 90 sec)

Cut chicken into bite size pieces. Sautee in peanut oil and 1 tbsp soy sauce. Set aside.
Add carrots and broccoli, sautee for 3 min or until tender. Add onion, garlic, jalepeno. Sautee another 2 minutes. Add Cabbage, rest of soy, rice vinegar and return chicken to pan. Let cabbage wilt (2 or 3 min) stirring often to get liquids to coat. Microwave noodles for 90 sec per instructions, add chicken and noodles to pan. Toss until well incorporated.
I divide to 5 servings for about 525 calories each. Can easily be divided to 8 servings.

That was my first attempt, it didnt have bean sprout but it had edemame

Looks amazing! I can't eat many grains, so I can't do the udon, but I love this Chicken lo mein recipe.0
