I really don't like beans but I know they are healthy to eat. Does anyone have any good recipes for beans where you can diguise the taste of the bean? I have tried it in tuna and that works pretty well. Anything else I can use? Thanks0

I had some in my dip I made for my veggies last night. I ran out of my regular dip.
sour cream, brown beans (though any beans would work) a small handful of cheese. I also added a tablespoon of chili accents tomatoes.0 -

Thanks for the link. I want to eat black beans becsue I heard they were high in protein but I didn't know what to do with them.

Take a can of black beans, drain them, rinse them, puree them in a blender, add 1/2 cup egg beaters, 1 tsp vanilla, blend again, then add it to a package of FF/LF brownie mix (No Pudge comes to mind).
My son loves them and he never knows the difference.0 -
When i was younger my mom would slow cook lima beans in a crock pot all day long with a hamhock and add some salt and pepper and by the end of the day it was delicious. Hope you enjoy! Amanda0

I love lentils!
Lentil Patties
25 min | 10 min prep
SERVES 4
1 cup cooked lentils
1 egg
saltine crackers
oil (for frying)
Mix together the lentils& the egg.
Add enough cracker crumbs to make the mixture stick together.
Drop the lentil mixture by tablespoonsful into a hot skillet with just enough oil to keep the patties from sticking.
Cook until the edges of the patties are brown and crispy.
Serve as is.
Also makes a great sandwich.
Lentil Burritos
A lentil burrito that can be eaten hot or cold.
It can be made with vegetable stock for vegetarians.
40 min | 15 min prep
SERVES 4 -6
1 cup lentils, rinsed
2 cups chicken stock
1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
1 cup chopped zucchini
1 cup chopped green bell pepper or red bell pepper
1/2 teaspoon ground cumin
1/4 teaspoon hot sauce (to taste)
1 cup mild taco sauce
4 ounces monterey jack cheese, shredded
8 flour tortillas
Garnish
diced avocado
sour cream
chopped cilantro
Wash& drain lentils.
Bring to a boil with stock; cover, simmer until just tender, about 20 min.
Drain if necessary.
Heat oil on medium heat.
Cook onion, garlic, zucchini, pepper to tender crisp.
Stir in lentils, hot sauce,& taco sauce.
Adjust seasonings.
Stir in cheese.
Spoon 1/2 C of mixture down center of each tortilla.
Roll up (Can assemble ahead& reheat rolled in dampened paper towels in microwave).
Can be eaten hot or cold.0 -
