Easy crockpot carnitas, made it today:

4 boneless pork loin chops, cubed (about 2 lbs)
1 tbs bacon drippings or oil of choice
1 12 oz jar TJoes Hatch Green Chile Salsa
Freshly squeezed juice of one orange, or two clementines.

Brown the pork cubes in bacon fat or oil until crusty brown on one side. Transfer to crockpot. Add salsa & orange juice. Cover and cook about 4 hours on high, about 6 hours on low. Shred for tacos or burritos.

Oh yea! Sounds great. I'm known in these parts for my burritos/taco bar. Did a 6.5lb rib eye for the Paquio fight over the summer. 4 guys and we ate it all. I'm not allowed to make tacos for awhile haha.

I made crockpot chicken last night
    10 oz of chicken
    1can cream of chicken
    1 bar of cream cheese
    1 cup of chicken broth
1 tbsp of dry ranch mix
Cook on low for 2-4 hrs
    Pull out chicken and shred
Can be put over pasta, potatoes, rice
    It is freaking delicious!

    Crockpot pork chops
However many pork chops you need to serve
A package of dry brown gravy
1 can of cream of chicken
About 1 cup of chicken broth
Cook on low 4-5 hrs or however long it takes to cook al your pork chops. Has an amazing gravy for potatoes

    Pulled Pork/Chicken
1-2 pork tenderloins or package of skinless chicken parts (breast, thigh, whatever) rubbed with your favorite bbq seasoning
1 bottle BBQ sauce (I find a thicker, less vinegary sauce works well)
A tiny bit liquid smoke if you're inclined that way, but we leave it out

Cook on low 6-8 hours. We shred and use for sandwiches or serve over rice or grits. I've also done the buffalo version of this with a bottle of Franks and a little extra water. In this case, season the meat with salt and pepper first.

I've got in the crock pot right now:

    1 boneless pork loin roast
    1 can of sauerkraut
    2 apples, peeled & chopped

You can either slice the roast, or we tend to shred it and use it either in sandwiches or just alone as a meat dish. Don't let the sauerkraut scare you off if you're not a fan. The apples tend to counterbalance the tartness and especially if you shred the meat, the texture of it sort of melts away and blends with the meat.

I'm new to sauerkraut - maybe the last 10 years I've come around to it, and now I actually incorporate it into meals. This sounds great!

I really like putting a whole chicken in the Crockpot. A little salt and pepper, a little thyme, and 9 hours on low -- you get this absolutely amazing melty-roasted falling-apart bird, plus a ton of braising liquid you can use to make an incredible stock.

I cook in the crock pot most days since I'm so tired after work, all of my recipes are easy, basic recipies since I have no patience for cooking. I make salsa chicken for tacos weekly like the OP. I also make:

*Chicken breast with green enchilada sauce and a can of pinto beans. Shred chicken for burritos.
*Chicken breast with pasta sauce, black olives, mushrooms, garlic, and oregano. Shred and top with mozzarella cheese and eat in a bowl.
*Chicken breast with petite diced tomatoes, kidney and black beans, diced onion, cayenne pepper and chili powder. Shred chicken and eat as chili.

Those are just some of my weekly go to favorites.

Anyone have experience with Fish in the crock pot? I just found a couple Tuna & Slow Cooker recipes. I'm wondering if the taste/smell lingers in the pot, should I get a slow cooker specifically for fish? And did the fish turn out all right or just emulsified into stock?
