I am going up to family's lake cabin for the day in a few weeks, and we're all suppossed to bring a dish to pass. Everyone usually has their set thing to bring, a grandma brings potato salad, M-I L brings fruit, someone always brings chips/dip, etc, and normally some type of bars. So I need to bring something up and I'm thinking some sort of veggie salad thing that is able to sit out (There is VERY limited fridge space.) I'd like to bring something pretty healthified, so I can have some, seeing as all the others bring calorie laden goods!
Thanks in advance!

I have an awesome salad recipe with dressing. The dressing could always go in the fridge and just be added prior to eating. Add me and I'll find the recipe and send it to you once my little one is napping

You can make a bean salad. It is easy to throw together the night before. Marinate in your fridge all night and then transport in a ziploc bag in a cooler of ice. No need for refrigeration ... you can just keep in the cooler until ready to serve.
I don't have time to type out my recipe, but here is a good sample recipe:

Oh ... should mention that you can reduce sodium by rinsing all the beans.
Also just looked at that recipe ^ and it has more sugar than mine. I would drop the sugar to about 1/3 to 1/2 cup (or less) depending on taste.
