Quinoa with grilled tomatoes, button mushrooms, french beans
This is my creation - so delicious!!

6 aspargus stalks
1/2 cup french beans
1tbsp sliced almonds
1 tsp olive oil
1 cup button mushrooms cut in half
1 cup quinoa cooked
8 grape tomatoes sliced in half
2 tbsp water
1. Cook quinoa as per usual - I use veggie broth.
2. Cut aspargus into 2 inch pieces.
3. Using a wok, add 1/2 tsp olive oil and add beans and aspargus and sautee for 4-6 minutes until tender. When cooked place in a bowl to the side.
4. Add 1 tbsp of sliced almonds to wok and brown - about 30 sec - 1 min - shake wok/pan. Toss on top of beans/asparagus.
5. Add button mushrooms to wok with 2 tbsp water - sautee until tender 3-4 min. Place to side in a bowl.
4. Add 1/2 tsp olive oil to wok - cook grape tomatoes cut side down and sautee for 2-3 min.
5. Move wok to side - add q cup cooked quinoa and button mushrooms. And place on plate.
6. Top quinoa with bean/aspargus mix.

That's why I kicked it up with all of these veggies - so it works out to 1/4 cup cooked quinoa and loads of veggies!Looks very tempting. Would you knw how many carbs are in 1 serving pls?
