I make something similar to that with a few more ingredients. It is usually good for about 3 days...after that...it gets a little sad and a little old tasting.
This is the recipe that I use...

I'm prepping my lunches for the week but I took pause because I wasn't sure whether I could prep 5 days of these ingredients:
- canned tuna
- fresh parsley
- diced tomatoes
- lemon juice
- Evoo
- salt and pepper
Yay? Nay?
Not 5 days in advance... I'd say 3 days maximum.
As others have said that preparation of those ingredients is not time consuming at all so you could do it pretty much daily.
You should eat the opened canned tuna within 3-4 days.
A raw ripe tomato should be eaten within about 3 days.
Fresh parsley should be fine for a week.
The other ingredients should be fine for a long period of time.

The parsley, evoo, lemon juice, salt and pepper you could probably mix, it's just a dressing, and even portion out the serving size in advance if you really want. Open the tuna and slice the tomato and mix daily.0
