Is there an easy way I could make two mini quiche with eggs and frozen pepper stirfry?

    I have a recipe for fritata which is basically a quiche with no crust...pretty easy and very changeable to meet tastes

    Use muffin tins for lil quiche cups.....cut up bread into cubes and place 1st in muffin tin....(spray with pam 1st :) ) then add eggs and stir fry mix....top with cheese and bake til it looks done at 350 degrees...I make these a lot with various fillings...yumm!
