Picnic!

This weekend I'm going to a friend's birthday picnic and I want to take something healthy, filling and not too calorific without people necessarily knowing it's 'diet' food. Any ideas?

    Take a salad tub. Lots of salad & lots of fruit. Picnic's can be really healthy. Whenever we have family picnics my sister plates a salad with cold meats or fish, salad & new potatoes. Always looks so nice & not obvious diet food, just healthy!
  • Vinegar-based coleslaw is perfect picnic food! The creamy versions have too much fat, and an acid-base, like vinegar, helps stabilize blood sugar to boot!

    And, if straight cabbage isn't a favorite, add lots of shredded carrots, celery, zucchini, jicama... any crunchy veggie really.

    I LOVE to take this recipe to carry-ins. I eliminate the brown sugar and the nuts, and then I use the fat free versions of everything and splenda instead of real sugar. It's always a hit!

    I make a faux potato salad.. sub cauliflower for potatoes and do everything else the same.. no one can ever tell the difference

    get a qt of plain non fat yogurt add one can of drained crushed
    pineapple in natural juices and 2 small boxes of sugar free
    vanilla pudding mix, mix well.
    serve as a dip with fresh fruit ! very low calorie (around 90 per cup)

    I have got to try this. I love my potato salad
    So does my hubby and he didnt know the difference till i told him

    I wasn't expecting the sweet suggestion but that might be the first one I try...

    Check out my cilantro coleslaw recipe on the recipe page.

    Here is a another simple salad...

    I bag large shrimp cooked
    2 cans rotel tomatoes (mild green chilis)
    1/2 red onion sliced very thin
    lots of fresh chopped cilantro
    squeeze of lime juice
    hot sauce to taste

    Make it the night before and refrigerate.

    Top with sliced avocado.
