I purchased a crock pot during black friday.....what's your favorite dishes to make?

My favorite low calorie/easy crock pot dish is chicken breast and salsa. So good and so easy.0

So many favorites!
Beef roast, pork roast, chili, chicken & white beans. I do at least one hearty crock pot meal each week and then use it for meals for several days. I'm planning to try crockpot lasagne and enchiladas soon.
Every couple of weeks I also do a bone broth which I cook for up to 72 hours. Very healthy and I use the broth for soups, rice, quinoa or just drink it plain. Right now I've got a chicken carcass simmering.
For breakfast I often do steelcut oatmeal with cranberries and pecans. Put in the crockpot at night on low and breakfast is ready in the morning. 1 cup oats (plus cranberries & nuts) and 7 cups liquid. I use half water and half coconut milk. Makes enough for several days.

I LIVE for my Crock Pot.
Do a quick google search and you will come up with a ton of recipes. I love doing turkey chili (cook the meat before adding it to your crock pot), soups and stews, roasts and have thrown a whole chicken in the crock pot to cook.
I've done ribs in my crock pot (add a few halved onions to the bottom of your crock pot before layering your prepped meat on top so the ribs don't sit in the fat), and the chicken with salsa thing is AMAZING (I'll shred the chicken breasts after they're fullly cooked).
Another thing I love to do is make freezer bag meals during my meal-prep on Sundays. I'll prep the meat, veggies, etc. stick the stuff in a large ziploc bag with the dish's name, cooking instructions, date, etc. written on it and toss that in my freezer until ready to throw into the crock pot.
One favorite is a "Cilantro Lime Black Bean and Corn Chicken" dish that is all over.... http://www.stockpilingmoms.com/2014/01/crockpot-cilantro-lime-chicken/ I make this one all the time and serve as tacos.

Question - I typically leave at 6 a.m. and get home around 5:30 p.m. - anyone aware of recipes that can cook that long on low (other than pot roast which turns out terrific)?0

I pretty much use mine to cook beans. Soak, then put in slow cooker. Easy, then you can use them for whatever.0
