Favourite Vegetarian Meals

My husband and I want to make an effort to eat less meat for environmental reasons. What are some of your favourite vegetarian dinners that are between 500-1000 cals per serving and have an appropriate amount of protein?

    http://cookieandkate.com/2013/west-african-peanut-soup/ This is so good. To give it less calories/more protein you can sub out some of the peanut butter with PB2 and serve it with Beyond Meat Chicken strips. I usually double the amount of greens called for.

    Vegetable lasagne.

    Chick pea curry with rice.

    Root veggie casserole with veggie dumpling.

    Quorn stir fry.

    Taco soup - 1 can each of pinto beans, garbanzo beans, kidney beans, white beans, and navy beans. 1 can of tomato soup (those little 10-12 oz ones). 2 cans of corn. 1 can of stewed, chopped tomatoes. 1 onion (optional). 1-2 packets of taco seasoning (I preferred the spicy version). (can size is usually the 15-17 oz size or so. Doesn't have to be too accurate.

    Chop and sauté onion in a little olive oil, put it in a bit pot. Dump in every single other ingredient (do NOT drain the cans - the liquid goes in too), mix together, and heat until the desired temp. That's it. Very big pot of soup, very tasty, good protein, and can adjust calorie size via portion size.
