My husband is vegan, so I eat a lot of vegan meals. While he is happy munching on a carrot here or a bag of unsalted sunflower seeds there; I want something hot and tasty!
I know a few great vegan recipes, but I could use some more that are tried and true to add to my repertoire. They don't actually have to be hot, but please make them tasty.
Thanks!

Oops that one had chicken. Simply skip the chicken. Here's a similar casserole. I served this at the office potluck.

This is a recipe for vegan gluten-free veggie burgers. I love these things. They freeze well, too. This is a recipe that you can adapt if you want - I'm going to add jalapeno to the next batch I make.

coconut sweet potato curry- lots of recipes online
yum bowls (basically chopped up green salad with beans (and sometimes rice) mixed in and a tahini/nut/vinegar/oil dressing)
greek feast of fallafels, baba ghanush, hummus, veggies, and pita (I like mine with tsatzkiki sauce too, but that's not vegan)- lots of recipes online
tom kha soup (with mushrooms instead of meat)- lots of recipes online
veggie sushi made at home with nori, brown rice, avacado, carrot strips, and cucumber strips.

My Whole Food Life has a ton of recipes that are great. She has an excellent 3bean & sweet potato chili that I LOVE!
One Green Planet I just discovered tonight.
Minimalist Baker was also recommended for me.
I am not vegan but am trying to eat more plants and they are cheaper than meat so its a win win for me.0 -
I find replacing minced beef with lentils is and great start. Lentils are low in saturated fat and are filling. Different lentils have different texures and have different cooking times so experiment! Deliciously Ella has a good bolognese recipe in her book, I just adapt it to my taste. From this basic recipe, you can adapt it to make chilli, cottage pie (try adding sweet potatoes and other root veg to the mash for flavour) or lasagne (make a bechamel sauce with almond milk).
also look at replacing meat with beans. I use all types of beans in curries and cassoulet to give a good texture and find they help to satisfy me.
I find recipies on youtube and I just experiment. It's really important to use a good range of herbs and spices to add flavour.
I hope this helps,

I've got a yummy vegan bagel recipe. I've converted them to breadsticks too.0

Look up gordon Ramsay's Broccoli soup recipe. Sooo good!0

I am a meat eater, but I have vegan friends who round for dinner occasionally. My list of go to recipes are as follows. Google recipe names for other variations.

Go to BudgetBytes.com and check the Vegetarian/Vegan section. Some of my favorites are the Black Bean and Avocado Enchiladas (you can add cheese to your half!), Black Bean and Roasted Salsa Soup (I made a double batch yesterday!), the Weeknight Black Bean Chili (sub the veg ground crumbles for the ground turkey). She has a lot of other recipes that aren't as black beany (I love them!). Check it out.
Also, I just bought a cookbook called Crock-Pot Vegetarian Recipes and a lot of them are vegan.0 -
The best place ever to find delicious vegan food is at http://www.thugkitchen.com/
They have put out two cookbooks too...

I like the recipes on ohsheglows.com.0

I second ohsheglows.com.
I also really like chezbettay.com/. She has really good pictures and it's easy to follow her recipes. Also she makes very distinctive foods without a lot of esoteric, hard to find ingredients.0 -
I made this the other day and even my omni family enjoyed it:

Check out the cookbooks Veganomics and Happy Herbivore. Both contain really easy vegan recipes that are quick and tasty. There are, of course, recipes in there that are more time consuming, but these are my go-tos for vegan recipes. Last night we made a lentil-couliflower curry that was phenomenal. My husband and I are both vegan, and have really played with a lot of foods to find what works for us.0

Not vegan, but I do enjoy vegan meals quite a bit. My favorite vegetarian and vegan blogs are Oh My Veggies (vegetarian) and Oh She Glows (vegan).0

If you have an Asian market nearby, I strongly suggest spending some time looking around there, as it's pretty easy to find vegan/vegetarian substitutes for things like pork, chicken, prawns (don't make the mistake we did of not following the directions to the letter). There's also chicken-less chicken broth, etc.
My roomies (one omni, one vegan) and I LOVE LOVE LOVE kimchi-fried rice. It's so so simple and really good. Maangchi's site is full of recipes that can very easily be veganized; what we love about this one is that it's so flexible and simple, and yet so yummy - you can add or remove whatever you like. Try it! maangchi.com/recipe/kimchi-bokkeumbap0 -

Those are some of my favorite vegan recipes!0 -
I just made a red lentil soup with coconut milk, red curry, tomatoes, sweet potatoes, onion, ginger, garlic & serrano pepper. You can add any vegetable, greens work well along with some chick peas. Honestly, so tasty and flavorful, fast and cheap! Also, so much better the 2nd day.0

Grilled or roasted vegetables on top of pasta or polenta. You could add a bit of parm to yours.0

Wow--thanks everybody. These look awesome!
Also, if anyone other than me is looking at this thread for vegan ideas, here are some of my personal favorites:
http://www.runningonrealfood.com/curried-coconut-chickpeas-spinach/
http://www.wholefoodsmarket.com/recipe/vegan-mushroom-gravy
Chickpea Salad:
1 can of chickpeas
2tbsp Brianna's Vinaigrette
About 1 tbsp lemon juice (gently squeeze 1/2 of a lemon)
1/2 tbsp rosemary
1/4 tsp salt
1/4 tsp pepper
1/2 cup fresh parsley
*Combine everything in a bowl and eat cold.

Substitute cooked lentils and/or Beyond Meat Beefy Crumbles for the ground meat, liquid aminos (or vegan version) for the Worcestershire sauce, mushroom broth for beef broth, and omit the dairy or use nut-based substitutes. It's so good that my meat-and-potatoes husband loves it.
I find that almost any recipe can be adopted. Cooked lentils with steak seasoning make a great sub for ground beef (and Beyond Meat is pretty good). I eat dairy and fish, so I don't typically sub those out, but no reason you can't.0 -
Post punk kitchen. There scrambled tofu is delicious and add potatoes to make more of a dinner like meal.0
