Do a search here for Shiritaki noodles. Lots of threads. Lots of recipes.

I personally find the yam based ones vile, but don't mind the tofu based ones.

Regardless, I'd rather have zucchini noodles if I'm wanting a noodle dish and low on calories/carbs.

Do you have any stores like whole foods or nice grocery stores in your area?
One thing I like is Explore Asian noodles.
They have things like black bean noodles, aduki bean noodles, spinach noodles
I'm sure they have carbs, but it's really healthy food.

Love the zucchini noodles, the zero cal noodles I bought here in the UK was vile though, had to throw them away as nothing could kill off the smell and flavour (even after rinsing them 10 times)

Hope the ones around yours is better. I'd read the reviews if I was you.

For shirataki noodles just rinse, dry well, and dry fry, then add sauce. I prefer it in ramen usage with some kind of fish or oyster sauce and not in Italian dishes.
Zucchini, beet, radish, cucumber, squash, etc noodles all have their own counterparts for sauces. If it tastes good on the veggie, it will taste good on the veggie noodle.

I used shirataki noodles a couple of years ago when I was trying to eat vegetarian. The smell when you open the bag is terrible, rinse VERY well. but I found I needed to have them as a very minor component of a dish.
