I need to reduce my meat and dairy intake because it is adding o my inflammation problems.
I am limited in my mind to eggplant, beans, and non-GMO tofu for replacements.
Does anyone have any tried and true recipes or Pinterest boards with ideas?

I just ordered some pure hemp protein, I'm hoping that will help. Getting protein without fat is a problem for me. They suggest to mix it with almond milk and a frozen banana for a smoothie. I got mine from Vitamin shoppe, but I'm sure there are plenty of places to get it. Good luck, I'll try to get back to you with the results0

I liked this site for a lot of veggie meal ideas, which helped to add in a lot of non-meat ideas: http://aveggieventuresrecipebox.blogspot.com/2005/03/alphabet-of-vegetables_6295.html
Seeds - if you can do them - can be very helpful to add some variety and calories, like sunflower or pumpkin seeds added to a salad can make it more filling, you know? IF you can do cashews - I noticed you were limited on nuts so I wasn't sure - there is a lot of fun stuff you can do with cashew cream (I make my own from raw cashews and water) and it is a good dairy sub for things that need to be thickened. It thickens when heated. -)0 -
I didn't think of hummus!0

Thank you. Yed. I have to be careful with nuts and seeds, between diver and trying to keep inflammation down,. My choices are limited. I even have to keep my egplant in control because its a nightshade veggie :-/0
