Anyone have any simple egg muffin recipes, using a muffin tin?
Just started a new job where I wake up very early and don't have a lot of time to eat.
Any recipes that can be prepped the night before or even frozen would help me out a lot.

I have tried these and they are awesome and easy. I will crack whole eggs or scrambled in a muffin pan top with ham and shredded cheese. And bake at 350 for I'd say try 12 minutes. They store perfect in the frig in a container. Heat one up pop on a english muffin or sandwich thin and uour good to go.0

These are the ones I make (link below). They keep in the fridge for about a week. Just pop a couple in the microwave in the morning. I also bought one of those egg sandwich makers - makes an egg mc muffin type sandwich in 5 minutes - one of my best purchases ever!

I do this all the time. So good!0 -
i do this a lot with a casserole pan. line the bottom of pan with favorite bread, add favorite meat/and or veg and cheese, top with egg and add more cheese, bake. i have done this with biscuits, hawaiian rolls, cinnamon bread, garlic toast, bagels, english muffins...bacon, prosciutto, ham, chicken apple sausage, spinach, onions, mushrooms.... almost anything works.0

I beat egg whites, put them in the bottom of the muffin tin. Then add veggies like tomato bits, mushrooms, onion
and cheese and bake them at 350 for 12 min. The egg white still have the great taste but are great if you are concerned about the cholesterol.0 -
