Freezer Meals

Does anyone do freezer meals? Like you prepare meals for the week and then freeze them so you have time to make a decent dinner without it taking hours? If so, what have been the most successful recipes? What turns out horrible after being frozen? Please share!

    I make loads of food for the freezer - soups, curries, chilli, quiches, pies. It saves time later on and is much more economical.

    I make meatloaf for the freezer and cabbage rolls (I made 176 servings yesterday, so I am set for a while!) I used to make stuffed manicotti, too when I still ate a lot of pasta.

    I do bean stews, soups, meatballs,patties ( salmon, kale & quinoa, tuna, ground turkey or chicken), lasagne rolls, stuffed shells, crustless quiches, casseroles. I freeze in portions and thaw what I need.

    I do a lot of batch cooking. If I happen to make a recipe that freezes well, will do a huge quantity for upcoming weeks frozen in small portions. Here is my go to list. Most of it is braised. You will have to google for recipes.

    Coq au vin.
    Dak dori tang.
    Boeuf bourguignon
    Estouffade.
    Chicken caccioatore.
    Meatballs and meatloaf.
    Bolognese sauce.
    Lamb tagine.

    And I forgot that Pesto sauce for pasta freezes well too.

    Chili is a good one. Beef stew works too. hm.... various soups n stews really just avoid big quantities of veg that get gross when u freeze them. chicken, beef, or lamb curry. Bananas freeze well to make smoothies later; don't overlook frozen fruit. That stuff is good. XD Also get a rice cooker if u don't have one. I would not be freezing rice. make in the cooker and defrost your other stuff such as curry then put them together. U can also cook and freeze meat patties such as lean beef or turkey burgers.

    I do way too much batch cooking. Think 60+ meals at a time. I do everything that people have mentioned but also do a ton of simple things- chicken breasts with rice or roasted yams or roasted potatoes plus 1-2 cups veggies, pork tenderloin or roast beef sliced up in 4 oz servings, ground beef, bison or turkey with 3/4-1cup pasta with sauce and again veggies. I have found that when freezing pasta, I slightly undercook it. (very slightly) or it can be a bit to mushy when I reheat. I have had no problems freezing rice, I just add a small spritz or 2 of water when I reheat it.

    The only thing I am not 100% sold on is freezing scrambled eggs (breakfast burritos, etc) it's ok, I just find it a bit...rubber. Something feels off with the texture but no one else in the family notices so it could just be me.
