Plant based diet meals ... Slow cooker?

Looking for suggestions for good tasting plant based meals. Slow cooker meals would be amazing. Avoiding all dairy and pastas. We do like rice and quinoa to pair with meals. Thanks in advance

This vegetable curry is one of my favorites. Serve it over rice (quinoa or other grains would work, too), with some naan or pita bread to sop up the sauce. Yummy!

If you don't have time for a slow cooker, I would also recommend this stove top veggie curry. I can have this on the table in about 20 minutes. You'll need a quick cooking grain to go with it. Jasmine rice works well, but quinoa or freekeh would work, too.

It's great as is. I haven't been able to find red curry powder, so I use regular curry powder and add 1/4 teaspoon of cayenne pepper to bring up the heat. Adjust the amount of cayenne for your heat preference. It's also pretty yummy just with curry powder and no cayenne. Sometimes I will use fresh tomatoes instead of canned, but otherwise no modifications necessary.0
